No Bake Peanut Butter Cookies

What You Will Need:
Large Sauce Pan

Wax Paper
Spoon to Stir
Measuring Cups
1 Cup Sugar
2 Tbsp butter or margerine
1/4 Cup Milk
1/2 Cup Peanut Butter (I've always just used creamy.. one day I'll venture and use chunky!)
1/2 tsp vanilla
1 1/2 Cups Rolled Oats (Not the quick oats.. the Old Fashioned Ones)
(Note from Nikki: I doubled the recipe this time around, because I wanted extra's to take to work to share)

Directions:
1. In sauce pan, mix butter, sugar, and milk. Bring to a full boil over low-medium heat.
2. Boil for 1 minute, but make sure to stir the entire time.
3. Remove from the heat and stir in vanilla and peanut butter, stir until peanut butter is melted.
4. Add all the oats, and stir all together.
5. Working quickily (really.. it hardens pretty quick so work fast)  drop by spoonfuls onto the wax paper. (I use two spoons, one to scoop and one to push off the spoon... the mixture is hot.. so don't touch!)
6. Let set up for 40-60 minutes or until they are easy to remove from the wax paper..
Make sure you store in a plastic baggie other wise they will go dry and crumbly.

Enjoy!
